I have my way, my mother in law has her way, they are both amazing, but I want to know more ways!!!!!

My way: bring roast to room temp, rinse and pat dry. Mix a 4 cloves finely chopped garlic, 1 tsp. thyme, 1 Tbsp both salt and pepper. Rub all over roast. Place uncovered in roasting dish in 500 degree oven. Cook 7 min per pound, then turn the oven off and DONT OPEN it for 2 1/2 hour. Comes out amazing every time.

I'm not sure this is roasted but I call it one version of roast.

Get the roast at room temp and rub regular yellow mustard all over it.

In a frying pan, sear the edges and sides of he roast. This creates a seal of crust around it. Then if frying pan is deep enough, put a packet of french onion soup over it. Put the lid and cook on low for a long time.

When about 1/2 done put the vegs in with it. I like quartered or small potatoes, small carrots, and onions. Mushrooms too if you like them. Simmer until falling apart.



The au juice is good over bread, too.
