I have my way, my mother in law has her way, they are both amazing, but I want to know more ways!!!!! My way: bring roast to room temp, rinse and pat dry. Mix a 4 cloves finely chopped garlic, 1 tsp. thyme, 1 Tbsp both salt and pepper. Rub all over roast. Place uncovered in roasting dish in 500 degree oven. Cook 7 min per pound, then turn the oven off and DONT OPEN it for 2 1/2 hour. Comes out amazing every time.
