Wanting the calf for meat?

-Dexter (small side, a shorthorn x Dexter might give you a 1,000 lb grown steer, maybe a bit more); tends to marble later in age, around 28 months. Savoury, very tender, small amount of tasty fat...Dexter calves are easy to calve and are born quite fast once labor begins.

few more suggestions:

-Galloway; "clovery taste", fruity, rich
-Angus; traditional juicy consistent "beef" flavor
-Charolais; buttery and tender
